Moroccan Tagine  with Dates & Honey

 

Mild/ Moroccan 

 

Classic Moroccan Stew – This delicious dish can be made in Tagine as the name suggests, however, if not tagine is available, just as good cooked in a slow cooker. It is sweet mild curry.  Great served with Cous Cous.

MOROCCAN TAGINE

Shopping List:

1 kg chicken ,lamb, seafood or vegetables –cubed

2 tablespoons vegetable oil

2 onions – sliced

1 ½ cups chicken or vegetable stock

1 cup water

½ cup seedless dates – halved - optional

¼ cup honey

½ cup blanched almonds – toasted

1 tablespoon chopped fresh coriander leaves – optional

Method:

  • Heat 1 tablespoon oil in pan
  • Cook meat or vegetables in batches until browned
  • Drain on kitchen paper
  • Heat remaining oil in same pan – add onion – cook till soft
  • Add spice blend – cook 1 min
  • Return chicken to pan with stock & water – simmer covered 45 mins
  • Remove lid – simmer 30 mins – until thickens slightly
  • Stir in dates, honey & almonds.
  • Sprinkle with fresh coriander – optional to garnish

Suggestions:  Serve with couscous
