Seafood Bouillabaisse

Seafood Bouillabaisse - Is a French Style mild seafood dish, with lots of flavour. Use any combination of seafood you wish.

SEAFOOD BOUILLABAISSE

Serves 4-6 (Mild)

 

Shopping list

1 KG Black Mussels

½ kg White Fish fillets

½ kg Green Peeled Prawns

1 Large Onion – Sliced

1-2 Tablespoons Olive Oil

½ Cup Dry White Wine

1 x 400 gram tin diced tomatoes

2 tablespoons tomato paste

Vegetable Stock

Parsley - Optional

Method:

  • Sauté onion in oil until soft
  • Add Spice blend – cook gently, stirring 1-2 minutes
  • Add wine, tomato paste, tomatoes & Stock – Bring to a boil & Simmer 5 mins
  • Add Fish & prawns – cook 3 mins
  • Add Mussels, cover – cook till shells are opened,

- discard any mussels which do not open

  • Sprinkle with parsley.
  • Sandy’s Tip: Serve with garlic aioli and Crusty French Bread.
