Spicy Pumpkin Soup

This is a great winter warmer, with a little kick, to give that extra warm feeling inside. Ideal in a slow cooker, using half the amount of chicken stock used and cook on slow for 6 hours, to bring out the flavours.

Ingredients: Garlic, ginger, cumin, pepper, salt flakes.

SPICY PUMPKIN SOUP

SPICE MILL BLEND

Serves 4-6 (Medium)

Shopping List:

1 Kg Pumpkin – chopped into chunks

2 tablespoons Vegetable oil

2 Leeks – Trimmed  & Sliced

1.5 Litres Chicken Stock

4 Tablespoons Plain Yoghurt – to serve

Coriander Leaves – to garnish (optional)

Method:

  • Saute Leeks in oil until soft – but not coloured
  • Add Spice Blend – cook for 1 minute
  • Add Pumpkin
  • Pour in Chicken Stock
  • Cover and Cook for 1 hour – until pumpkin is tender
  • Remove from Pan – Blend in food processor
  • Return to Pan – reheat
  • Top with 1 teaspoon yoghurt and chopped coriander – to serve

Slow Cooker Option- using on 750mls Chicken Stock. Cook on Low for 6- 8 hours, then blend In food processor

Serve piping hot with Crusty Bread, 1 tablespoon natural yoghurt,

 top with coriander.
