Vietnamese Chicken Curry

 

This is a very hot Asian Curry with all the fresh flavours of Vietnam.

Enjoy not only with chicken but can also be made with Seafood or Vegetables.

CHICKEN CURRY

(Serves 4-6 - Hot)

Shopping List:

1.5 Kgs Chicken Pieces (Thighs, Drumsticks, Wings)

2 tablespoons vegetable oil

1 ½ Cups Coconut Milk

½ Cup Water

2 Onions (Chopped)

Method

□    Chop each Piece of Chicken in two –Pat Dry

□    Heat Oil In Pan – Add Onion – Cook Until Soft

□    Add Spice Blend – Cook for 30 Seconds

□    Add Chicken – Toss Well – Cover and Cook for 8-10 Minutes Gently

□    Add Water & Cook for 10 minutes on Gentle Heat – Covered

□    Add Coconut Milk – Bring to Boil – Reduce Heat

□    Simmer uncovered  for 30 minutes – Stirring Occasionally

 

Suggestions: Serve on a Bed of Rice – Garnish with Chopped Coriander & Peanuts - Optional
